Arugula Salmon Salad with Capers and Parmesan

Rocket Salmon Salad

Here's an easy recipe to use up leftover salmon, especially if you're cooking for one. This is one of my favorite lunch salads, the capers complement the salmon so well! If you don't have any salmon left, don't worry, I've also provided a guide on how to cook it.

Salmon is one of my favorite fish and it's also full of omega-3s! Salmon is also a fantastic source of protein and far less saturated fat than chicken or beef.

Variations:

  • If there is no arugula where you live, you can use mizuna or mixed vegetables.
  • Canned salmon works perfectly here.

Rocket and salmon salad with capers and grated parmesan

When I make salmon for dinner, I usually cook an extra piece for lunch just to make this rocket and salmon salad with capers and grated parmesan – full of good fats and omegas!

  • 1 1/2 cups arugula
  • 4th ounce cooked sockeye salmon, Skin removed
  • 1 teaspoon Capers, drained
  • 2 teaspoon Red wine vinegar
  • 1 teaspoon Extra virgin olive oil
  • 1 tablespoon grated parmesan, approx. 0.25 oz in total
  • Salt and fresh pepper to taste
  • I used leftover salmon, but if you're using raw salmon just season it with some salt and pepper and bake it for about 10 minutes at 400F or in a pan lightly sprayed with oil. You can also air-fry salmon 400F for 6 to 8 minutes.

  • For the salad, place the rocket on a bowl, sprinkle with salt and fresh pepper and top with salmon and capers.

  • Drizzle some oil and vinegar over it and finish with freshly grated parmesan.
