All of the zucchini growing in my garden inspired me to try a new zucchini recipe. I have tons of savory zucchini recipes on my website such as baked zucchini sticks and zucchini and feta donuts, but I also love making desserts with them. This healthy zucchini bread is the perfect treat when you need something sweet. If you want to make it even more chocolaty, you can swap out the nuts for chocolate chips. This recipe replaced most of the fat with applesauce, so it's low in fat and yet very moist. It contains no butter and only ¼ cup of oil.
Why do people put zucchini in bread?
Because its delicious! I'm joking, but seriously – people put zucchini in bread because it adds moisture with no added fat or calories. Zucchini contains a lot of water, which means the bread doesn't dry out. Plus, zucchini is low in carbohydrates and calories, and full of vitamins and minerals like manganese, potassium, and vitamins A, C, and K. It's a great way to add nutrients to baked goods while keeping nutritional information in check.
Can I freeze zucchini bread?
Yes you can. This simple chocolate zucchini bread recipe makes two loaves of bread, so it's perfect for freezing if you want to keep one loaf for later. You can freeze the bread whole or in eight slices. When you cut it into slices, place parchment paper between each piece to keep them from freezing together. To heat up, defrost a slice in the refrigerator and then heat it in the microwave for 20-30 seconds. You can also heat the bread directly from the freezer in the microwave a little longer.

- 1 Cup All-purpose flour
- 1 Cup Whole wheat flour
- 1/4 Cup unsweetened cocoa, preferably Dutch method
- 1/2 TL baking powder
- 1/2 TL Baking soda
- 1/2 TL Salt-
- 3 Big eggs, easily beaten
- 1 Cup sugar
- 3/4 Cup unsweetened apple sauce
- 1/4 Cup Rapeseed oil
- 1 TL Vanilla extract
- 1 oz unsweetened chocolate, melted
- 1/2 Cup chopped walnuts, 1 3/4 ounces
- 2 cups grated zucchini, of 1 large (squeezed well with a tea towel)

Preheat oven to 325 ° F.

Spray two 8 1/2 by 4 1/2 inch loaf pans with cooking spray.

In a large bowl, whisk all-purpose flour, whole wheat flour, cocoa, baking powder, baking powder, and salt.
