White Split Urad Dal, which we Indians know as Dhuli Urad Dal, is also used to make Idli, Dosa, Vadas and Dahi Vada. It is of high nutritional value due to its protein, calcium and iron content.

The Uttapam recipe tip

Well, before I give you the recipe, I have to admit that I was thinking of making this healthy breakfast for another reason, and that the day before I made Vada Sambar, which is a lot of white urad dal paste left in the fridge would have . One tip I want to give you all is to let the dal paste sit at room temperature for four to five hours in summer and overnight in winter to make Uttapam fluffier.

Ingredients…

(For two large pancakes)

  1. 4 tbsp ragi flour

  2. 2 heaped tablespoons White Split Urad Dal (soaked and ground)

  3. Half a tomato finely chopped

  4. Half onion finely chopped

  5. Half a pepper finely chopped

  6. One tablespoon of thick curd, diluted with water or buttermilk

  7. Curry leaves

  8. Salt and red chili powder to taste

Now all you have to do is mix all the ingredients well. Remember that the consistency should be easy to spread, but not runny.

Spray or spread a teaspoon of oil or ghee on the hot non-stick or dosa pan. Spread the dough.

How much at a time depends on your size preference. I made a couple of small uttapams for finger food, while a couple of bigger ones for breakfast.

Cover and cook on both sides. Make thinner ones if you want, but this will require your dough to be a little runny.

Here's what I served with coconut chutney at breakfast … Yes, one more thing: because of the ragi flour, your uttapams may be a little darker than the normal ones, but the taste is amazing.
