Empanadas brought me back to summers as a kid in Puerto Rico. I ate empanadas (also known as pastelillos) every opportunity I could get from street vendors. My favorites were the ones filled with lobster, shrimp, or pizza. You can fill empanadas with almost anything you can think of, from leftover taco meat and pizza to what you call buffalo chicken pie filling. These lobster jalapeno empanadas couldn't be easier. How do you cook empanadas in the air fryer?
Preheat your air fryer to 325F degrees and cook it for about eight minutes, turning it in half.
What type of batter is used for empanadas?
I used frozen empanada slices (which were sold for baking). If you can't find the empanada slices for baking, the ones for frying will work too, or make my pizza dough recipe instead.
If you're using the pizza dough, roll out the dough as thinly as possible, then use a small jar and cut out as many 4.75-inch circles as you can. Roll out the remaining dough and repeat. If you have a large round cookie cutter, even better.
How to serve lobster empanadas
These air fryer empanadas are the perfect snack or lunch with a pinch of lime. You can also serve them with guacamole if you want. To get more out of a meal, add a simple avocado and tomato salad.
Variations
- Swap lobster for crab meat or minced shrimp.
- If you don't like spicy food, remove the seeds and ribs from the jalapeno.

- 8th frozen empanada slices, thawed
- 1 teaspoon unsalted butter
- 2 tablespoon diced onion
- 1 Jalapeno, chopped
- 8th Ounces coarsely chopped raw lobster meat, I buy frozen claws from Crowd Cow
- 2 tablespoon chopped chives
- 1 large protein, beaten
- 1 Lime cut into wedges, For serving
To make the filling

Melt the butter in a heavy pan over medium heat.

Add the onions and jalapeno and sauté for about 2 to 3 minutes until tender.

Add the lobster and cook for 1 to 2 minutes until it's just opaque.

Remove from heat and add the chives.

Drain quickly in a mesh sieve and set aside to cool.
Make the empanadas

Place the dough circles on a work surface.

Place about 2 tablespoons of lobster filling in the center of a circle; Wash the edges of the dough with water or egg.

Fold the circle over itself, press down on the edges with your fingers or a fork to seal it, and place it on a work surface.

Repeat until all empanadas are filled. Brush tips with egg rinse.
