This lighter ambrosia salad filled with fresh fruits, whipped cream, walnuts and marshmallows is the perfect dessert for spring or summer.
Ambrosia fruit salad
Ambrosia is a creamy fruit salad that is traditionally made from pineapple, coconut, fruit cocktail, cream and walnuts. This lighter version uses mostly fresh fruit, including berries and bananas. I longed for ambrosia and completely forgot that I made this recipe back in 2009. I found the old post and updated the photos. I hope you enjoy it!
Why is it called ambrosia salad?
"Ambrosia" is the food of the gods in Greek mythology. Ambrosia salad dates back to the 19th century when fruits like oranges and coconut were exotic and difficult to find.
Ingredients:
There are many variations of this salad. I toggle mine by adding lots of fresh fruit. The only canned fruit in my recipe are the mandarins.
- Mandarins
- pineapple
- Blueberries
- Blackberries
- Strawberries
- Bananas
- Walnuts
- Sweetened desiccated coconut
- Mini marshmallows
- Cool Whip Lite
How to go ahead
This fruit salad is so easy to whip up and perfect to prepare for when you have a party. In fact, it takes at least two hours to refrigerate it, but ambrosia can last up to 8 hours in the refrigerator.
Variations:
- If there's a fruit that you don't have or like, you can leave it out and add one of your favorites.
- Add grapes or peaches.
- Sub-pistachios or pecans for walnuts.
- Try Greek yogurt instead of Cool Whip.

- 1 Cup Mandarins
- 1 Cup fresh pineapple, diced
- 1 Cup Blueberries
- 1 Cup Blackberries
- 1 1/2 Cup Strawberries, cut
- 2 medium bananas, cut
- 1/2 Cup chopped walnuts
- 4th tablespoon sweetened desiccated coconut
- 1 Cup Mini marshmallows
- 8th oz Tru Whip Skinny, or Coco Whip Light

Combine fruit with cream, coconut and marshmallows.

Chill for 2 hours and serve.
