Broccoli and Cheese Twice Baked Potatoes

These cheesy baked potatoes were first microwaved (you can bake them, of course), then scooped out and mashed with cooked cauliflower, buttermilk, and cheese. Then they went back to the clams and garnished with steamed broccoli and more cheese, yummy!

If you're looking to sneak some veggies into your family's meal, this is the perfect side dish – ideal with chicken, steak, or pork chops. I often add cauliflower to my mashed potatoes and no one really notices. My very popular baked potato soup is the perfect example.

Child-friendly, vegetarian, gluten-free and easy to prepare. It took less than 30 minutes to make. You can easily prepare them and heat them just before serving. I served them with garlic lover roast beef and I had a happy family!

These twice-baked potatoes are so cheesy, stuffed with broccoli and cheese, plus some hidden cauliflower, but believe me, no one will know!

  • 18 ounces 4 medium red potatoes
  • salt and pepper, taste
  • 1 1/2 cups chopped broccoli florets
  • 2 cups chopped cauliflower
  • 1/2 Cup low-fat buttermilk
  • 1 tablespoon chopped chives, Optional
  • 1 Cup 4 ounces of shredded low fat spicy cheddar cheese
  • Prick the potatoes several times with a fork.

  • Put it in the microwave and use your baked potato setting until the potatoes are cooked through. (Or you can bake in your oven at 425 ° F for 1 hour)

  • In a medium-sized saucepan, mix the cauliflower and broccoli with a little salted water and cook covered for about 3 minutes.

  • Use a slotted spoon to remove the broccoli and set aside. Cook the cauliflower until soft for about 5 minutes. Drain and set aside in a large bowl.

  • Preheat the oven to 400 ° F.

  • Halve the potatoes lengthways.

  • Scoop the meat with the cauliflower into the large bowl, leaving a ¼ "bowl.

  • Place the potato peels on a baking sheet.

  • Mash the pulp with a potato masher or puree with the cauliflower with a hand blender.

  • Add buttermilk and salt and puree until smooth.

  • Fold in half of the chopped cheddar (and chives, if desired).

  • Return the potato and cauliflower mixture to the bowls.

  • Top with the cooked broccoli (I just put them in) and the rest of the cheese on top.

  • Bake for 5-10 minutes or until it is heated through and the cheese has melted. (You can also microwave it for a few minutes if you don't want to use the oven.)
