Spinach and ricotta quiche and chicken quiche are so popular on my website, but I am often asked how to make them crustless. For this low-carb version, I did this without a crust, with chicken sausage and spinach. Also, I used some light cream to give the eggs a creamier custard texture, as most quiches tend to have a spongier texture for baked eggs. That turned out to be delicious! Yes, quiche is great for making meals. You can cook it ahead of time and bake it the next day before you're done eating.

What should I serve with quiche?

If you serve quiche for breakfast, serve it with fruit salad or hash browns. For dinner, it goes great with a nice green salad or your favorite vegetables like parmesan crust delicata squash or roasted Brussels sprouts and shallots with a balsamic glaze.

  • Use romano cheese instead of parmesan.

  • If you want single servings, make crustless quiche muffins by pouring the egg mixture into a muffin pan. Bake at 350 degrees for 28-30 minutes.

This quiche without crustless sausage and spinach with Italian chicken sausage, spinach, Havarti and Parmesan is a simple and healthy recipe for breakfast, brunch or dinner.

  • Cooking spray
  • 3 combines sweet Italian turkey or chicken sausage, removed from case (total 8.5 ounces)
  • 12 ounce Bag of baby spinach
  • 1 Cup grated light Havarti or Cheddar
  • 1/4 Cup grated parmesan cheese
  • 2/3 Cup 2% milk
  • 1/4 Cup half & half cream
  • 5 Big eggs
  • 3/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • prize Freshly grated nutmeg
  • Preheat your oven to 350 degrees. Spray a cake pan with oil.

  • Cook the sausage in a large pan over medium heat and break open for about 5 minutes until cooked through.

  • Add the spinach and reduce the heat to low, cook until wilted, stirring occasionally for about 7 minutes. Drain the spinach well.

  • Distribute the spinach sausage mixture evenly in the prepared bowl and cover evenly with grated Havarti and Parmesan.

  • Make the pudding mixture by whisking the milk, half and half, eggs, salt, black pepper, and nutmeg together.

  • Pour the pudding into the bowl and bake for 35 to 40 minutes until centered.

  • Cut the quiche into 6 pieces and serve.
