Heart of Palm Noodle Peanut Stir Fry

I'm obsessed with those grain-free, gluten-free hearts of palm noodles that I used in this pan instead of noodles. They're so healthy – you pretty much eat a large bowl of vegetables! So much better than zoodles because they're not watery and have a similar texture to pasta. I have whipped up this vegetarian dish for lunch a couple of times! Made from a spicy, ginger-soy-peanut sauce and an egg for egg white. With egg, peanut butter, and spinach, the whole dish has about 17 grams of protein and comes together in less than 15 minutes. I finally got my hands on a Palmini-Linguine-Affil-Link (pasta made from palm hearts) that I've heard about on social media. To be honest, I was hesitant to try them, but when I opened the pack and tried them, they weren't scary at all. The palmini basically tasted like palm hearts, something I ate as a kid. I gave the noodles a good rinse to neutralize the taste and made them a pan. The next time I make them, I plan to make an Italian broccoli raven and sausage version. How to stir-fry a healthy flavorful peanut noodle

This healthy pan serves one up and is great when you need a quick lunch at home. You can easily double or triple this recipe if you need to feed more people or want leftovers.

  • Cook the garlic and ginger for 30 seconds, add the hearts of the palm noodles, then add the soy sauce and sriracha.
  • Add spinach and cook until it wilts.
  • Move everything to one side and add the peanut butter to the pan. Let it melt, then stir it into the pasta mixture.
  • Crack the egg and stir it.
  • Top with more sriracha, sesame seeds, and spring onions to serve.

Variations:

  • If you don't have palmini noodles, sign up Zucchini or vegetarian pasta for another low-carb alternative or cooked rice noodles.
  • For even more protein, use two eggs or add some edamame, tofu, or chicken.
  • You can also use additional vegetables like broccoli or peppers.
  • Swap the soy sauce for tamari or coconut amino acids so this pan fries gluten-free.
  • Swap out the peanut butter for sun butter if you want a nut-free pan.
  • If you don't like heat, skip the sriracha.

This simple, vegetarian Hearts of Palm Noodle Peanut Stir Fry is made with a flavorful peanut sauce, spinach, and egg – under 15 minutes and so good!

  • 1 tablespoon sesame oil, divided
  • 1 clove garlic, chopped
  • 1 -1/2 teaspoon fresh ginger
  • 1 12 oz package Palmini (heart of the palm) Linguini
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon Sriracha
  • 1-1 / 2 cups Baby spinach
  • 1 tablespoon peanut butter
  • 1 big egg
  • Sesame seeds, for the topping-out ceremony
  • spring onions, for garnish
  • In a large non-stick frying pan, heat 1/2 tablespoon of oil, add garlic and ginger and cook for 30 seconds until fragrant.

  • Add the hearts of the palm noodles and stir.

  • Add 1 tablespoon of soy sauce, sriracha and stir the cook for 1 minute, add spinach and cook until wilted, 2 to 3 minutes then move aside.

  • Add peanut butter on the other side and let it melt for about 30 seconds until everything is melted. Then mix everything together.

  • Move everything to one side.

  • Add remaining oil on the other side and crack the egg, stir and mix everything together.

  • Place in a bowl and top with more sriracha, sesame seeds and spring onions.
