Makeover spinach gratin

I bring this dish to my mom's home for Thanksgiving every year because everyone loves it! Much lighter than a conventional gratin and so easy to prepare! This is a must have for the holidays, but if you want to cook this up for a smaller gathering, you can easily cook half the recipe. More gratin recipes I love Brussels sprouts gratin, spiralized beet and potato gratin with turkey or the classic gratinated potato gratin.

Spinach with cream sauce and cheese

If you don't know what a gratin is, it's basically cheese-coated creamed spinach and baked in the oven.

Variations

  • I used Gruyere here, but Swiss or Mozzarella would work.
  • You can also leave out the melted cheese and serve it as plain creamed spinach instead.
  • Make this gluten-free by using an all-purpose gluten-free flour mix like Cup4cup.

Creamy spinach with a hint of nutmeg is baked in the oven, topped with melted cheese for a decadent Christmas side dish.

  • 3 tablespoon Whipped butter, I used Land O Lakes
  • 1 Cup finely chopped onion
  • 1/4 Cup flour, Use gluten-free AP flour for GF
  • 1/4 teaspoon fresh grated nutmeg
  • 3 cups 2% milk
  • 3 lbs frozen minced spinach, thawed, I used 3 16 ounce packages
  • 3/4 Cup freshly grated parmesan cheese
  • 1 tablespoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 Cup grated Swiss or Gruyère cheese
  • Preheat the oven to 425 ° C.

  • In a heavy-bottomed frying pan, melt the butter over medium heat. Add the onions and sauté them until they are translucent, about 10-12 minutes.

  • Add the flour and nutmeg; Cook for 2 more minutes, stirring occasionally.

  • Add the milk and cook until thickened, about 5-7 minutes.

  • Squeeze as much liquid out of the spinach as possible and add the spinach to the sauce.

  • Add 1/2 cup of parmesan cheese and mix well. Season to taste with salt and pepper.

  • Put the spinach in a large baking dish and sprinkle the remaining 1/4 cup Parmesan and Swiss cheese on top. Bake for 20 minutes, until hot and bubbly. Serve hot.
