Navratri Special Low Carb Coleslaw Recipe

Like every year this year I fast during Navratri. Nine days of self-control and clean eating. Since I don't eat cereals or kuttu atta treats with carbohydrate potatoes and sago, it's important for me to eat something filling, yet healthy. As we all know by now, on a vegetarian diet, it is not possible to consume very little carbohydrates, so the Navratri period can very easily be converted into a low-calorie diet. Still, I manage to keep the carbohydrates as low as possible.

Last night, to break my fast, I prepared for it.

Healthy coleslaw recipe

ingredients

  • Finely chopped cabbage 200 g

  • Carrot grated 100 g

  • Cucumber 100 g
  • Paneer (cottage cheese) crumbled 28 g

  • Yogurt drained or very thick 2 tbsp

  • Salt to taste

  • Spinach puree 2 tsp
  • Pepper powder 1/2 teaspoon

  • Apple chopped thin small pieces 100 g

  • Pear thinly chopped pieces 50 g

  • Pomegranate seeds 50 g
  • Lemon juice a few drops

Step 1

Crumble the paneer and place in a blender with the drained yogurt, spinach puree, salt and pepper powder. Mix well. Process until smooth.

Put the shredded cabbage in a bowl. Add salt, lemon juice and grated carrots and mix well.

Add the apples, cucumber, pears, and pomegranate. Add paneer and curd mixture as a dressing and toss well. Serve immediately as if cabbage leaves water it can get watery after a while.

As you can also analyze, it is a little higher for carbohydrates, but very low in fat and good enough with fiber content. In fact, if you fast 26-7 = 19 g of carbohydrates in one full meal, it doesn't matter that much. Not true? And yes, let me tell you, that one serving was just too much with a glass of buttermilk made from two teaspoons of cottage cheese. 🙂 One last thing to add is that it is a wonderful snack for diabetics too.
