Fried chicken is my favorite food! ! But I never fry at home, so whenever I feel like roasting chicken, I make it in the oven or in the air fryer! If you want to eat healthy but don't want to sacrifice taste, your family will love this! I skin the chicken, then cover it with a mayo and Dijon mixture that makes it juicy, then cover it with bran flakes, seasoned with salt, pepper, cayenne, paprika, and garlic powder. How do I roast chicken in the oven?

The key to making the chicken crispy is to place a wire cooling rack on a foil-lined baking sheet. This allows the hot air to circulate under the chicken to ensure it cooks evenly and doesn't soften the coating from sitting in the chicken juices.

What to serve with fried chicken

This simple fried chicken would be delicious served with corn on the cob, laden cauliflower puree, broccoli and cheese, twice-baked potatoes, or smashed sweet potatoes. Try roasted Brussels sprouts and shallots with a balsamic glaze or toasted green parmesan beans for some vegetarian ideas.

  • Change – Swap drumsticks for chicken legs or breasts.
  • Change – Flakes for corn flakes.
  • No food processor, no problem – If you don't have a food processor, put the bran flakes in a plastic bag and smash them with a mallet or heavy can.
  • Mild pallets – Feel free to leave out the cayenne pepper if you don't want your chicken to be spicy.
  • Sodium – This recipe calls for kosher salt, which is less salty than regular table salt. If you are watching your sodium intake, it's okay to cut back on it, and if you're not using kosher food, start with a teaspoon of regular salt.
  • Gluten free – To make this “fried” chicken gluten-free, replace the bran flakes with Rice Chex or gluten-free panko.
  • Air fryer – To prepare in the air fryer, cook the chicken in two batches at 400 degrees for 22-24 minutes.

  • 6th big Drumsticks with bones, Skin removed
  • 2 1/2 cups Bran flakes
  • 3 teaspoon kosher salt, less if you use regular salt
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon fresh black pepper
  • 1/2 teaspoon Cayenne pepper
  • 5 tablespoon Hellmans light mayonnaise
  • 1 teaspoon Dijon mustard
  • Oil spray

Oven method

  • Preheat oven to 400F.

  • Line a baking sheet with foil and place a wire rack over it. Spray the rack with oil.

  • Chop up the granola in a food processor or food processor.

  • In a bowl, mix the crushed granola with the salt, paprika, garlic powder, black pepper and cayenne pepper.

  • Place in a shallow bowl or ziplock bag.

  • Mix the mayonnaise and Dijon mustard.
