Pastrami Reuben Egg Rolls (Air Fryer or Oven Recipe)
Golden, crispy pastrami Reuben egg rolls with Russian dressing, made healthier by cooking in the air fryer or baking in the oven, taste so good!
Reuben Eggrolls
A traditional Reuben usually consists of corned beef, Swiss cheese and sauerkraut, served on rye bread with Russian dressing. It's the ultimate deli sandwich. This entertaining variant, also known as “Irish” spring roll, contains the classic sandwich filling in an egg roll package. My fillet of pork filled with beetroot is another creative variant of a reuben.

Reuben Egg Roll Ingredients:
Flesh: I went for sliced, cooked pastrami which I found at my local dealer Joe, but I'm sure you can only find it in delis at most. You can use corned beef if you prefer.
Covering: Just like the sandwich, these egg rolls have a lot of sauerkraut and melted Swiss cheese. I think some chopped cucumbers would be tasty too if you want to add some.
Dressing: Instead of putting the Russian dressing in the egg rolls, which would make them moist, I use it as a dip.
How to make Russian dressing from scratch
Russian dressing is very easy to make from scratch. Just mix these ingredients together:
- Light mayonnaise
- Ketchup
- Worcester sauce
- horseradish
- Hot sauce
- Lemon juice
- Onion powder
- salt
Russian dressing is often compared to Thousand Island Dressing. The Russian dressing is similar, but spicier and less sweet than Thousand Island.
Freezing Tips:
- If you don't want to cook all of the egg rolls at once, you can freeze them in freezer-safe bags for up to six months. Make sure to squeeze out as much air as possible when sealing the bags.
- To cook out of the freezer, cook in an air fryer preheated to 320 degrees for 12 to 14 minutes, turning in half until golden brown and crispy. Serve immediately with dipping sauce on the side, if desired.

Pastrami Reuben Egg Rolls

Golden, crispy pastrami Reuben egg rolls with Russian dressing, made healthier by cooking in the air fryer or baking in the oven, taste so good!
For egg rolls:
- 1 1/2 cups sauerkraut
- 8th Egg roll packaging
- 6th Ounces Pastrami, minced (or corned beef)
- 1 Cup shredded low-fat Swiss cheese, I like Jarlsberg
- Small bowl water, for sealing
- Olive oil spray
For Russian dressing:
- 1/4 light mayonnaise
- 2 tablespoon Ketchup
- 1/2 teaspoon Worcester sauce
- 1/2 teaspoon horseradish
- A dash of hot sauce, I used Frank's Red Hot
- 1/2 tablespoon fresh lemon juice
- 1/4 teaspoon Onion powder
- prize kosher salt

Squeeze any excess liquid out of the sauerkraut with a clean kitchen towel. Put aside.

Place 1 egg roll wrapper on a clean, dry work surface with corners positioned like a diamond.

Add ¾ ounce (2 tablespoons) of pastrami, 2 tablespoons of cheese, and 2 tablespoons of sauerkraut in the bottom third of the wrapper.

Carefully lift the nearest lower point and wrap it around the filling.

Dip your finger in a small bowl of water and run it along the edges of the wrapper.

Fold the left and right corners towards the middle and keep rolling into a tight cylinder.

Repeat with the rest of the filling and packaging.
Air Fryer Egg Roll Method

Preheat the air fryer to 370 degrees.

Spray oil on all sides of the egg rolls and rub them with your hands to coat them evenly.

Cook egg rolls in batches for 10 minutes, turning halfway or until golden brown and crispy.

In the meantime, mix the ingredients for the dressing in a small bowl.

Serve immediately with side dressing or drizzle.
Egg roll recipe:

Bake 400F in a preheated oven for 12 to 16 minutes and flip it in half.

From frozen, 375F 18 to 20 minutes, turn halfway.
