Pepperoni Pizza Bites
My daughter loves these mini frozen bagel pizzas so I wanted to make an easy Pepperoni Pizza Bite recipe from scratch. I figured making bagels and then topping them with pizza ingredients was going to take too long, so I streamlined them and made them in muffin tins instead. How to make pizza bites
- Prepare pizza dough: Combine the dry ingredients and then add flour. Knead the dough until it is sticky but not sticky. You can also use pre-made pizza dough to make this faster.
- Divide the dough Form 16 balls and press each into the greased muffin tin.
- Bake the dough for 15 minutes at 375 degrees and remove from the oven.
- Fill up on your pizza bites: Gently press the batter into the center of each cup to form a small well. Top each with sauce, mozzarella cheese, and chopped pepperoni.
- Bake the bites another 3 minutes, until the cheese has melted. Carefully remove the mini pizzas from the oven and let them cool before eating.
Ideas and variations for pizza toppings
I've used turkey pepperoni on my pizza bites, but you can top them with whatever you like on your pizza! Here are a few ideas:
- Vegetarian with finely diced paprika or chopped vegetable leftovers
- Caprese with fresh mozzarella and basil
- Pesto pizza with pesto and cheese
- White pizza with ricotta, mozzarella and Italian spices
- Dessert Pizza with Nutella and mini marshmallows
- I've made homemade bagel dough so my pizza bites have extra protein, but you can also buy premade pizza dough.

Pepperoni Pizza Bites are like these frozen mini bagel pizzas only made from scratch in a muffin pan using my Greek Yogurt Bagel Batter.
- Olive oil spray
- 1 Cup unbleached all-purpose flour, Whole Wheat or Gluten Free Blend*, (5 oz weight)
- 2 teaspoon baking powder, Make sure it hasn't expired or it won't rise
- 3/4 teaspoon kosher salt, Diamond crystal, use less if using table salt or mortons
- 1 Cup fat-free greek yogurt, not regular yogurt, it gets too sticky (I recommend Stonyfield)
- 2/3 Cup Marinara or pizza sauce
- 1 Cup shredded semi-skimmed mozzarella cheese
- 1 ounce turkey pepperoni, chopped
- Crushed red pepper flakes, for serving (optional)

Preheat the oven to 375°F and line two 12-cup stand-size muffin pans with oil.

In a medium bowl, combine flour, baking powder, and salt and whisk well.

Add the yogurt and mix with a fork or spatula until well combined, it looks like little crumbles.

Lightly dust a work surface with flour and remove the dough from the bowl, knead the dough a few times until the dough is sticky but not sticky, about 15 turns (it shouldn't leave any dough on your hand when you knead it move away).

Divide the dough into 16 equally sized small balls (about 25 grams each).

Press each ball into the bottom of the muffin cups and let them rise slightly up the side.

Bake for 15 minutes, remove from the oven and gently press the balls down in the middle to make a small well.

Sprinkle each scoop with 2 teaspoons sauce, 1 tablespoon cheese, and a pinch of pepperoni.

Return to the oven and bake for 3 minutes or until cheese is melted.

Remove from the oven and let cool for 2 minutes. Using a paring knife or offset metal spatula, carefully remove the bites and slice around the top to remove any cheese that may be stuck to the pan.

Spray the pan again and repeat the process with the remaining batter and toppings.
