Pizza Sausage Rolls (Made with Greek yogurt bagel dough)

I look forward to sharing these delicious pizza sausage rolls with you! I love pizza and like to eat it in different creative ways, like this French Bread Pizza Caprese or this Breakfast Pizza. These rolls take classic Italian sausage pizza ingredients and wrap them in my bagel batter. They're perfect for starters, school lunches, and dinners for the whole family. To save time, you can use store-bought pizza dough instead.

Are sausage rolls healthy?

Usually sausage rolls aren't the healthiest – that's why I wanted to recreate them. The biggest culprit for fat and calories is usually the sausage, which is why I used Italian chicken sausage instead of pork. Chicken sausage is significantly lower in fat and calories. I also use my bagel batter, which is full of protein thanks to the non-fat Greek yogurt.

How to make pizza sausage rolls from scratch

These baked sausage rolls are very easy to make from scratch.

1. Start with the Greek yogurt bagel batter recipe. If you want to use store-bought pizza dough instead, that's perfectly fine too.
2. Divide the dough into four balls and roll it into circles.
3. Now it's time to add the filling. Cover the dough with sauce and top with the cheese and a halved sausage compound.
4. Wrap the dough around the sausage and bake it for 25-30 minutes at 400 degrees.

What does sausage rolls belong to?

Italian sausage rolls will make a light lunch for your kids, served with marinara sauce for dipping. And of course adults love pizza rolls too. When serving as a meal, combine it with a large green salad, baked zucchini sticks, or your favorite vegetables.

Note: I didn't test these with gluten free flour, but I made the bagels with cup4cup and had great success so I'm sure it will work. You may need to add another 5 minutes to the baking time.

Pizza sausage rolls wrapped in bagel batter with Italian chicken sausage, marinara, and mozzarella make a fun starter or snack your whole family will love.

For bagel dough:

  • 1 Cup all-purpose unbleached flour and more for dusting, (5 oz weight) Use cup4cup for GF *
  • 2 teaspoon baking powder
  • 3/4 teaspoon kosher salt
  • 1 Cup non-fat greek yogurt, (should be fat) I recommend Stonyfield
  • 1 protein, beaten (whole egg also works well)
  • Sesame seeds, for the topping-out ceremony (optional)

For the filling:

  • 2 raw chicken italian sausage left, 3 ounces total (halved lengthways) I like Premio
  • 4th Discs Provolone or mozzarella
  • 8th teaspoon Pizza sauce or marinara
  • Marinara sauce, for serving (optional)
  • Preheat the oven to 400 degrees. Place parchment paper or a silpat on a baking sheet. If you're using parchment paper, spray oil on it to avoid sticking.

  • In a medium bowl, mix the flour, baking powder and salt together and whisk well.

  • Add the yogurt and mix with a fork or spatula until well blended (it will get sticky and look like little sprinkles).

  • Lightly sprinkle flour on a work surface and take the dough out of the bowl, knead the dough a few times until the dough is sticky but not sticky (about 15 turns) (no dough should remain on the hand when peeling off). If it's too sticky, add a few extra sprinkles of flour.

  • Divide into 4 equal balls.

  • Working with 1 ball at a time, lightly dust a rolling pin and work surface, and roll the dough into a 5 ½ ”circle about ¼” thick.

  • Spread 2 teaspoons of pizza sauce in the center of the circle, leaving an edge of about 1 cm free.

  • Place 1 slice of cheese in the center of the circle and then put half a sausage compound on top.

  • Gently bring both sides of the dough up, wrap one side around the sausage, and then the other.

  • Squeeze the dough so that it is sealed around the sausage and place it seam down on the prepared sheet pan seam.

  • Repeat with the rest of the batter, sauce, cheese, and sausage.

  • Brush each with egg detergent, top with sesame if necessary and bake for 25-30 minutes.

  • Let cool for 5 minutes, then cut into 6 pieces and serve.

* I didn't test these with GF flour, but I made the bagels with cup4cup and had great success so I'm sure it will work. You may need to add another 5 minutes to the baking time.
