Roasted Honeynut Squash
I am currently obsessed with Honey Nut Squash!! This toasted honey nut with maple syrup and pecans is a delicious side dish. It's even tastier than the roasted acorn squash, which I usually prepare the same way. I could totally see myself having this pumpkin with a scoop of ice cream for dessert! Can't you find a honeynut? Is Honeynut Squash the Same as Butternut?
Honeynut Squash and Butternut Squash are very similar, but Honeynut is smaller and sweeter. I first saw honeynut squash a few weeks ago at my local supermarket and was intrigued. When I tried it, I was officially thrilled! I like how easy they are to cook. The size is perfect and you don't have to peel it. Just fry the pumpkin in the meat, then scoop it out with a spoon.
How to fry honeynut squash
Just cut the pumpkin in half, scoop out the seeds and put some butter and spices on top. Fry it in the oven at 425 degrees, cut side up, until tender, about 35 minutes.
I flavored the honey nut squash with cinnamon, but you can play around with squash spices, nutmeg, etc. Once tender, sprinkle some maple syrup on top and add chopped pecans for texture.
How to serve honeynut squash
Look for larger honeynut squashes, which weigh around 10 ounces for this recipe, as I serve half as a side dish. If you want to serve this recipe as a main course, eat the whole pumpkin and combine it with an autumn salad like Mixed Baby Greens with Pomegranate, Gorgonzola and Pecans, or Baby Greens with Goat Cheese, Beets and Candied Pecans.
Roasted Honeynut Pumpkin Variations:
- Skip the nuts or try chopped walnuts or hazelnuts.
- Swap the cinnamon for pumpkin pie spice.
- Keep it dairy-free and use coconut oil instead of butter.
