Sausage and Broccoli Rabe Egg Rolls (Air Fryer or Oven)

We love a traditional spring roll recipe, but we also love filling spring roll wrappers with other fun combinations! Broccoli raven and sausage is one of my favorite pasta combo, so I knew I would like these sausage and broccoli raven egg rolls! They are a great option for a party starter as they can be cooked and frozen in advance and deliciously dipped in your favorite marinara sauce. What is the difference between broccoli and broccoli rabe?
Broccoli and Broccoli Raven are similar, yet very different. Broccoli raven, also known as rapini, has thinner stems and smaller florets than broccoli and also has leafy greens.
Ingredients for Italian spring roll filling
That's in these spring rolls:
- Sweet Italian Chicken Sausage
- Broccoli raven
- Shallots and garlic
- Salt, pepper, red pepper flakes
- White wine
- Parmesan
- Spring roll packaging
For these spring rolls, I fry the sausage with broccoli raven and shallots, then add garlic, salt, black and red pepper, and white wine. Then I drain the mixture and mix in the parmesan before I fill the spring rolls.
Freeze
These spring rolls can also be cooked and frozen ahead of time to have them on hand for snacks or apps.
- Freeze uncooked spring rolls, pour into a freezer bag and close, squeezing out as much air as possible. Freeze for up to six months.

- 16 ounce uncooked sweet Italian chicken sausage, Housing removed
- 1 large shallot, chopped
- 3 cups uncooked broccoli raven, Rapini, chopped, discard large stems, use only thinner stems
- 2 Garlic cloves, chopped
- 1/2 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon crushed pepper flakes
- 1 ounce White wine
- 1/4 Cup grated parmesan cheese
- 12th Egg roll packaging, Nasoya
- Marinara for serving, Optional

In a large pan, add the sausage over medium heat and mince with a spatula for about 2 minutes.

Add shallots and broccoli rabe and keep breaking the sausage for about 7 minutes while it cooks.

Add the garlic, salt, pepper flakes and wine and cook over medium heat for about minutes, break the sausage and cook the wine.

Remove from heat and put the sausage mixture in a mixing bowl, allow to cool for approx. 10 minutes.

Drain in a sieve so that there is no additional liquid, then transfer to a mixing bowl and mix in the Parmesan cheese and mix well.

Put the spring rolls together: Place the spring roll packaging one at a time on a clean surface with the tips pointing up and down like a diamond. Spoon 1/4 cup sausage mixture onto the bottom third of the wrapper.

Dip your finger in a small bowl of water and run it along the edges of the packaging. Lift the lower point near you and wrap it around the filling. Fold the left and right corners towards the center and keep rolling them into a tight cylinder.

Set aside and repeat with the remaining wraps and filling.
Air fryer method

Spray oil on all sides of the spring rolls with your fingers to coat them evenly.

Air fry in batches at 370F for 7 minutes, turning halfway until golden brown. Serve immediately, with marinara sauce as a side dish if desired.
Oven method

Preheat oven to 400F for baking.

Place the rolls on a greased baking sheet that has been sprayed with oil. Spray each roll evenly with oil.

Bake for 6 to 8 minutes on each side, or until the rolls are crispy and golden brown.
