Fried Brussels sprouts with pancetta
Fried Brussels sprouts are delicious when shredded and sautéed with pancetta (or bacon), garlic, and oil. If you think you dislike Brussels sprouts, I challenge you to try these! I love it when people tell me they don't like Brussels sprouts and then quickly change their minds after preparing them this way. I also once thought I didn't like Brussels sprouts until my friend Nicole made me chop them up before sautéing them in garlic and oil. Now i love her! You can easily prep everything to make this a day or two beforehand if you are doing this for Thanksgiving. Also try Brussels sprouts gratin or maple soy glazed roasted Brussels sprouts and butternut squash with bacon.
How to shred Brussels sprouts:
There are several possibilities for this. It's easiest to buy them pre-shredded, but I don't recommend doing this as they won't be as fresh after being cut. Instead, I do it like this:
- I prefer to use a sharp knife and find this rather relaxing, but a little time consuming. To do this, cut off the stems, discard any fallen outer leaves and cut in half lengthways. Once they're cut in half, place the cut side down on the cutting board and cut them into thin slices.
- The fastest way to do this is with a food processor equipped with cutting attachment. Turn on the food processor and drop the Brussels sprouts in portions.
What do you fry Brussels sprouts in?
I use a large, heavy pan for frying. You want to make sure the pan is hot so the edges turn brown and stir often.
Variations
- Swap the pancetta for bacon.
- Swap the pancetta for turkey bacon if you don't eat pork.
- Skip the meat altogether and add shallots.
- For a similar vegetarian version, try sautéed Brussels sprouts with shallots.

- 2 ounce bacon, chopped
- 2 lb Brussels sprouts, Weight after removal of the outer leaves and stems
- 1.5 tablespoon Extra virgin olive oil
- 4th Cloves garlic, chopped or thinly sliced
- kosher salt and freshly ground pepper

After washing thoroughly, grate the Brussels sprouts finely with a large, sharp knife.

In a deep, heavy frying pan, fry the pancetta over medium heat until the fat melts and the pancetta turns golden brown, about 5 minutes. Add olive oil and garlic and fry until golden brown. Add grated Brussels sprouts, salt and pepper to taste and fry over high heat for about 6 to 10 minutes until tenderly crispy.
