Shrimp and Andouille Sheet Pan Dinner
Shrimp and andouille sausages as well as the "trinity" (celery, paprika and onion) are classic NOLA flavors. This pan and andouille pan roast is one way to channel those traditional, hearty flavors, but in a lighter dish. This healthy sheet pan recipe is a vegetarian stew dinner that isn't weighed down with a lot of butter. How do you make a tin dinner?
Tin dinners are the answer for busy weekdays when you don't have the time or energy to cook. You can prepare all the ingredients in advance. So if it's dinner, just season the vegetables and put them in the oven. The best thing about this shrimp and sausage platter recipe is that it's a full meal cooked on top of one dish. And if you line the baking sheet with foil, there is no cleaning!
- Cut the broccoli, Baby Bella mushrooms, celery, bell pepper, onion and sausage and place on the baking sheet.
- Drizzle the vegetables with olive oil and season with Creole spices, garlic powder and cayenne pepper.
- Bake for 15 to 20 minutes at 400 degrees.
- Add the prawns to the pan and roast for another five to ten minutes, until opaque.
- Peck out the lemon and squeeze the juices over the sheet pan.
What is andouille sausage?
Andouille sausage, pronounced "ann-DOO-ee", is a spicy, smoked pork sausage. They also sell a type of turkey that I used here that is less fat. It's popular in Cajun and Creole cuisines, and is commonly found in Gumbo and Jambalaya.
Variations:
- If you can't find turkey andouille, you can swap it for another smoked turkey or chicken sausage.
- Sub cauliflower for broccoli.
- Use green, yellow, or orange peppers instead of red.
- If you don't like spicy foods, you can leave out the cayenne pepper.
- If you're particularly hungry, serve vegetables and egg whites over steamed rice.

Shrimp andouille tin dinner with broccoli, mushrooms, peppers, onions and celery, seasoned with Cajun spices, for a light and easy pan dish.
- ¾ lb large shrimp, peeled off
- 2 tablespoon olive oil, divided
- 1 ½ TL Creole spice, divided
- 1 small head of broccoli
- 5 oz Baby Bella mushrooms
- 2 to 3 Stalks of celery
- 1 Red pepper, cut
- ½ big red onion, cut
- ¾ lb smoked sausage, preferably andouille, sliced
- ½ TL Garlic powder
- ¼ TL Cayenne pepper
- 1 lemon , For serving
- Steamed rice, optional for serving

Preheat the oven to 400F.

If you are using frozen shrimp, thaw them completely and drain as much water as possible by patting them dry with a paper towel.

Brush with 1 tablespoon of olive oil and ½ teaspoon of creole spices. put aside.

Cut the broccoli into florets, cut the mushroom caps in half (quarter the larger ones) and cut the celery into pieces about 5 cm.

Add them to a large baking sheet with sliced peppers, onions, and smoked sausage.

Drizzle 1 tablespoon of olive oil over the sheet pan and season with 1 teaspoon of creole spices, garlic powder and cayenne pepper. Throw to coat and then distribute evenly.

Fry for 15 to 20 minutes or until the vegetables are tender and the onions are just beginning to brown around the edges.

Add the prawns and cook for another 5 to 10 minutes, or until firm, opaque, and cooked through.

To serve, prick the lemon and squeeze the juice over the roast.

Serve with steamed rice if you wish.
