Baked oatmeal with blueberries and bananas
This is my favorite oatmeal recipe that I can prepare ahead of time or serve with company! It's also great for the holidays or if you need a potluck breakfast dish. It's a warm, filling, heart-healthy breakfast that your whole family will love. It feels like you're eating dessert only that it's full of fiber. What I love most about this dish is that it tastes like I have dessert for breakfast. In fact, I usually opt for baked oatmeal when I'm craving a sweet treat. I've seen recipes that mix oatmeal but to be honest I prefer to keep it intact, I think the texture is better.

- You can do this with any combination of nuts and fruits you like, the possibilities are endless!
- Make it gluten free by using gluten-free oats, and you can make that milk without the milk you would normally have on hand.
- Swap the bananas for thinly sliced apples and walnuts.
- Swap the blueberries for strawberries or mixed berries.
- Move forward, can be kept in the refrigerator for 3 to 4 days.

This is the BEST blueberry and banana baked oatmeal. It's perfect for serving guests for brunch or setting it up for the week for easy meal prep, as leftovers taste just as good warmed up.
- 2 medium ripe bananas, Cut (the riper the better) into 1/2-inch pieces
- 1 1/2 Cup Blueberries
- 1/4 Cup honey, or maple
- 1 Cup uncooked fast or old-fashioned oats *
- 1/4 Cup chopped walnuts or pecans
- 1/2 teaspoon baking powder
- 3/4 teaspoon cinammon

- 1 Cup non-fat milk, or any milk
- 1 large egg
- 1 teaspoon Vanilla extract

Preheat the oven to 375F. Lightly spray an 8×8 "or 9×9" ceramic baking pan with cooking spray; put aside.

Arrange the banana slices in a single layer on the bottom of the ceramic mold. Scatter half of the blueberries over the bananas, 1/4 teaspoon cinnamon, 1 tablespoon honey and cover with aluminum foil.

Bake for 15 minutes, until the bananas are soft.

In the meantime, in a medium bowl, mix together the oatmeal, half of the nuts, baking powder, remaining cinnamon and salt; stir together.

In a separate bowl, whisk the remaining honey, milk, egg and vanilla extract together.

Remove the bananas from the oven, then pour the oat mixture over the bananas and blueberries.

Pour the milk mixture over the oatmeal, being careful to distribute the mixture over the oatmeal as evenly as possible. Scatter the remaining blueberries and walnuts on top.

Bake the oatmeal for about 30 minutes or until the top is golden brown and the oatmeal has set. Serve warm out of the oven. Cut into 6 parts.
