Ground Turkey Skillet with Zucchini, Corn, Black Beans and Tomato

This quick one-pot pan of ground turkey with zucchini, corn, tomato, and black beans is great for midweek dinner or meal prep!

I just love a simple week-long recipe that you can make in a pan. This dish has all the flavors of summer with fresh zucchini, corn and tomatoes. It's a full meal all in one – however, you can serve it with a cereal if you want. This turkey pan is inspired by my Santa Fe-filled zucchini, but simplified and cooked in less than 20 minutes. How to Make a Ground Turkey Pan

This healthy turkey pan cooks pretty quickly. First fry the turkey and season with salt and cumin. After about five minutes, move the meat aside, add the onion and tomato paste and fry for a minute.

Next, add the black beans, corn, tomato, jalapeño, corn, and ¼ cup of water. Then add the zucchini and the remaining salt and cumin. Cover the pan and cook on low for four to five minutes.

Preparation of meals

This simple turkey pan dinner is perfect for meal prep. The leftovers can be warmed up very well and can be kept in the refrigerator for up to 4 days. Simply store in individual containers and in the microwave until warm.

Variations:

  • Swap the minced turkey for ground chicken or beef tenderloin.
  • Swap zucchini for yellow pumpkin.
  • Use canned diced tomatoes if you don't have fresh or fresh cherry tomatoes.
  • To make this pan low-carb, skip the black beans and corn and replace them with spinach and red peppers.
  • To make this pan spicy, leave the ribs and seeds in the jalapeño. You can also top it with hot sauce before eating.
  • Sprinkle with grated cheddar cheese.
  • Serve with avocado on top.
  • If you want to top up this meal, serve it with brown rice or quinoa. For a low-carb option, use cauliflower rice or spaghetti squash.

  • 14th Ounces made from 2 medium or 1 large zucchini, quartered and sliced ​​3/4 inch
  • 1 lb 93% lean ground turkey
  • 1/4 Cup chopped onion
  • 1 tablespoon Tomato paste
  • 3/4 cups canned black beans, rinsed and drained
  • 3/4 cups Corn kernels, fresh or frozen
  • 1 large diced tomato
  • 1 Jalapeno, diced
  • 1 Cloves garlic, chopped
  • 2 tablespoon chopped coriander, plus more for garnish
  • 1 1/4 teaspoon cumin
  • 1 1/4 teaspoon kosher salt
  • 1/4 Cup water

  • Spray a large pan with oil over high heat and fry the turkey, season with 1 teaspoon of salt and 1 teaspoon of cumin.

  • Cook the meat until the turkey is cooked through, about 5 minutes.

  • Push the meat aside, add the onion and tomato paste and cook for 1 minute.

  • Add the black beans, corn, tomato, jalapeño pepper, and corn and stir with 1/4 cup of water.

  • Add the zucchini, the remaining 1/4 teaspoon of salt, and the cumin.

  • Mix and cover, cook for 4 to 5 minutes or until the zucchini is tenderly crispy.

  • Serve with lime wedges and more coriander if you like.
