There is a lot of discussion about the use of corn in our daily diet. There was a lot of controversy when we heard about GM Corn. Still, the fact remains that most people prefer to eat corn, especially in winter, after cooking it with butter, oils, and masala spices. It has also become a favorite of dieters.

While it is safest to eat cooked corn, many people like it raw. The corn kernels give texture to various salads and soups. According to the USDA, here are some tips for storing and preparing corn …

  • Uncooked corn can be stored in the refrigerator for almost 5 days.

  • Freezing cooked corn at zero degrees Fahrenheit for up to 6 months is safe.

  • When using packaged corn, it is best to check the expiration date or best before date.

Even so, I'm sharing a quick recipe for a healthy corn salad, all credits to my nutritionist. This is one of my evening snacks, especially in winter.

ingredients

  • 1 cup cooked / steamed corn

If you expect me to process you step by step, I might say it's DIY: P. Just mix all the ingredients and add a pinch of salt and pepper. Chaat masala and lemon would make it yummy!
