Wanderlust Carrot Halwa Pancakes with Ice Cream
A recipe for the showstopper Carrot Halwa Pancakes with Ice Cream. This is Mira's own (slightly simpler and healthier) version of a luscious Indian dessert called Malpua. It tastes like carrot halva pancakes with a dollop of ice cream!

- 2 grated carrots 60g oat flakes, ground (oat flour)
- 60g almond flour
- 1 tbsp ghee or coconut oil
- 70ml almond milk or something similar
- 6-8 appointments
- 1/2 teaspoon ground cardamom
- 3 tbsp coconut blossom sugar or any sugar
- 1 tbsp fennel seeds if you have a pinch of black pepper
- Extra ghee for the pancakes
- Simply mix all the ingredients, form small meatballs and cook in ghee.
- Serve hot with a big dollop of ice!
